Vegetable oils are used for the preparation of many food products.In order to improve their textural, oxidative and nutritive properties and also industrial applications, vegetable oils are modified by methods such as hydrogenation, interesterification, acetylation,winterization, blending etc.Blending should not have any adverse health impact.In this study coconut oil is blended with palmolein oil and trends in physio-chemical properties are established.
